Abstract

Extensive researches had been carried out by medicinal doctors during the Ottoman Era. The written documents of those researches include information relevant to disciplines such as medicine, pharmacy, culinary knowledge however, they could be extended to fields like linguistics as well. “Şurup Îmâlâtı” was written in 1309 (Hijri calendar) by Medicinal Doctor Celâl Pasha and is consisted of 20 pages. In this treatise, the following subjects and their preparation methods are studied: Syrups (strawberry, sour cherry, currants, pomegranate, barberry, bitter orange and orange, almond, rose); jams (sour cherry, currants, strawberry, apricot, apple, quince); the desserts which are offered before coffee (strawberry, sour cherry, currants, citron, bitter orange and orange peels); çevirmeler (a kind of sweetmeat); quince leather fruit; crystallised fruit (apricot). This article is consisted of three parts: In the first part general information about the treatise are provided. The second part contains the transcription of the text and the third part contains a glossary.
