Abstract

One of the main aims of the food and beverage industry is to guide the works in order to supply by determining increasing health problems and conscious consumer demands. For this purpose is aimed dissemination use of natural sweeteners instead of sugar which is known to be risky that overused in terms of health and involved in various food production. Stevia plant is natural sweetener that can be used instead of sugar. It enables the production of different products by adding in various food formulations. With these aspects, stevia plant has attracted the attention the consumer and the world of science with natural feature as it can prevent to reveal health issues stemming from excessive use of sugar. In this study; detailed information had been given properties of the natural sweetener stevia plant, production techniques, gastronomic use as a food additive, related to the use of health and legal aspects.
