Abstract

Osmanlı döneminde tabipler tarafından çok sayıda eser meydana getirilmiştir. Bu eserler, sahip oldukları özellikler itibarıyla, tıp, eczacılık, aşçılık bilimi ve dil bilimi gibi disiplinlerin alanına girmektedir. ‘Şurup Îmâlâtı’ başlıklı risale de bu tür eserlerden olup, Hicrî 1309 yılında Doktor Celâl Paşa tarafından kaleme alınmış, 20 sayfadan müteşekkildir. Eserde şuruplar (çilek, vişne, frenk üzümü, nar, anberbarisi, turunç ve portakal, bâdem, gül); reçeller (vişne, frenk üzümü, çilek, kayısı, elma, ayva); kahveden önce verilen tatlılar (çilek, vişne, frenk üzümü, ağaç kavunu, turunç ve portakal kabukları); çevirmeler; ayva pestili; buzlu meyveler (kayısı) ve bunların hazırlanma yöntemleri gibi konular ele alınmaktadır. Bu makale üç bölümden oluşmaktadır: Giriş bölümünde eserin muhtevası hakkında bilgi verilmiş; ikinci bölümde metin Latin harflerine aktarılmıştır. Çalışmanın üçüncü bölümünde ise terimler sözlüğü yer almaktadır.

Abstract

Extensive researches had been carried out by medicinal doctors during the Ottoman Era. The written documents of those researches include information relevant to disciplines such as medicine, pharmacy, culinary knowledge however, they could be extended to fields like linguistics as well. “Şurup Îmâlâtı” was written in 1309 (Hijri calendar) by Medicinal Doctor Celâl Pasha and is consisted of 20 pages. In this treatise, the following subjects and their preparation methods are studied: Syrups (strawberry, sour cherry, currants, pomegranate, barberry, bitter orange and orange, almond, rose); jams (sour cherry, currants, strawberry, apricot, apple, quince); the desserts which are offered before coffee (strawberry, sour cherry, currants, citron, bitter orange and orange peels); çevirmeler (a kind of sweetmeat); quince leather fruit; crystallised fruit (apricot). This article is consisted of three parts: In the first part general information about the treatise are provided. The second part contains the transcription of the text and the third part contains a glossary.
