Abstract

Vegetable dishes made with olive oil has an important place in Turkish cuisine. Meat without adding water, olive oil, dishes are cooked with the addition of vegetables and spices are called cold food or olive oil dishes. Dishes made with olive oil is consumed in the Aegean and Mediterranean favorites like. In terms of human health, olive oil has many benefits. For example, olive oil reduces the total cholesterol level in blood contributes to the prevention of hypertension and cardiovascular disease. In this study, Turkish Cuisine located in the made from vegetables sirkeli pırasa, kış kabağı yoğurtlaması, çağla dövmesi, zeytinyağlı deniz börülce, fasülye dible and sütlü madımak materials, construction process steps, photographs and energy and nutrient values of dishes are presented.
